Greetings, coffee and wine aficionados! We are thrilled to announce the arrival of our latest culinary delight on the sunny shores of Crystal River, Florida. Prepare for an unparalleled experience and an ever-so-interesting tale as we unveil Sirenia’s brand-new coffee and wine trailer, combining two beloved beverages in one stylish mobile unit.
Background
Jim and his son David, owner of Aggregation Distilling Company and Sirenia, reached out to us after acquiring the old Sun Dog Brewing Company. With a vision to transform the location into a unique indoor/outdoor space, he dreamed of creating a coffee and wine bar to enhance the area outside. Together with our team, it was decided to add a variety of light food options to cater to a variety of taste preferences.

A quaint trailer, adorned with sophisticated charm and modern flair, pulling into the vibrant streets of Crystal River. As the doors swing open, the aroma of freshly brewed coffee mingles with the tantalizing scent of fine wines, setting the stage for an unforgettable gastronomic journey. Wrapped in serene ocean blue hues and adorned with majestic manatees, Sirenia’s trailer is not just a culinary oasis but a symbol of commitment to the local environment. Nestled in Crystal River, where efforts to save these gentle sea creatures thrive, our design pays homage to these beloved inhabitants, reminding us of the importance of preserving our natural treasures.
10% of all Sirenia profits are contributed to nature conservation in Crystal River. Jim emphasized, “Manatees are an important and adorable part of our ecology, but we have many thriving ecosystems here that create this beautiful oasis for decompressing in nature, and they all deserve to be protected.”
The Name
“Sirenia” carries a fascinating story rooted in history and mythology. Derived from the sirens of Greek mythology—enchanting mermaids known for their alluring songs—Sirenia pays homage to these legendary creatures. Centuries ago, before the advent of oceanographic studies, manatees were often mistaken for these mythical sirens due to their similar shape and size. Sailors and explorers would return with tales of encountering mermaids, not realizing they had actually seen manatees. Today, we celebrate these gentle, endangered animals for what they truly are, recognizing that while they are far from the mythical sirens of ancient Greek lore, their story adds a rich layer of enchantment to our understanding of marine life and the inspiration behind this trailer’s name.
The Creation
This coffee and wine trailer was a journey of creativity and precision. From the initial concept sketches to the final execution, every detail was carefully considered to ensure a seamless blend of form and function. Our designer Geoff, in coordination with Jim, drew inspiration from the tranquil beauty of Crystal River, incorporating elements of nature and sophistication into the trailer’s aesthetic, making each component flow seamlessly. Crafted to be movable around the property, this combination of concepts speaks to the way that we dedicate ourselves to meeting the client’s wants and needs.
